A new entry in the box this week is Red Kuri Squash. I've included a link to recipe in this email. I haven't tried it but it looked pretty good and will be on the menu this weekend here. http://ahouseinthehills.com/2014/10/06/kale-and-roasted-red-kuri-squash-salad/. I've also cut the squash into 1 inch squares, sprinkled it with olive oil, salt & pepper, then roast it at 350 for about 30 - 40 minutes. Quick, easy and tasty.
